Summer recipes!

This past weekend I went to the farmer's market and OMG it's officially summer i.e. the best time for farmer's markets everywhere!

I'll admit: I've been in a little bit of a cooking rut recently. I tend to stick to the same easy dishes that are less recipes and more assembling of components. This method can be great (meal prep is a lifesaver for a busy gal or guy), but there's also something to be said about spending a little creative time in the kitchen versus just going through a routine.

So when I was at the farmer's market I challenged myself to grab a few different veggies - not just the sweet potatoes and kale that I always get, but I also picked up sugar snap peas and strawberries and red leaf lettuce. And now I'm going to challenge myself to make at least ONE new recipe using these ingredients this week.

My hope is that making a new recipe each week will continue throughout the summer season.

Here are some recipes featuring early summer produce that have caught my eye so far:

Chilled Asian Noodle Salad with Chicken and Avocado - This recipe uses vegetable noodles which I LOVE, especially in the summer. You could easily sub cubed tempeh for the chicken to make veg-friendly!


Spicy Grilled Shrimp - Okay, this recipe doesn't exactly highlight summer produce BUT it is made on the grill which in my opinion is the epitome of summer. I'd swap a more nutrient rich coconut sugar for the white sugar, or leave it out all together.


Dilled, Crunchy Sweet Corn Salad with Buttermilk Dressing - Nothing feels more like summer to me than fresh corn! This recipe also includes other seasonal highlights such as dill, parsley, cucumbers and peppers. Dairy free? I bet you could swap the buttermilk for a little coconut yogurt thinned out with lemon juice and omit the cheese.


Green Gazpacho - "This zippy, herbaceous drinkable soup is like a trip to the farmers’ market in a glass." Sounds good to me!


Grilled Halibut and Bok Choy with Coconut Lime Dressing - I love grilling ALL vegetables, greens included (so surprisingly delicious!). I don't have a grill but may have to invest in a grill pan, which basically turns your stove top into an indoor grill.


Strawberry Rhubarb Crumble Bars - Not sure how it happened but whoever invented the strawberry rhubarb combo was a genius. YUM!


Now I'm hungry - so who wants to come over for dinner??? ;)

Pumpkin Spice + Everything Nice!

It officially feels like fall here in NYC - the sun is setting earlier, there is a crisp-ness in the air and I've even seen some leaves starting to turn.

This week especially I've noticed my body craving different foods - my summery salads don't seem as appealing (I know, what??). I'm hungry for warmer dishes, heartier veggies like roasted cauliflower and baked sweet potatoes, sautéed greens, and ALL the warming spices like cinnamon, ginger, and nutmeg.

Today I'm sharing three recipes that incorporate these spices AND one of fall's favorite flavors: PUMPKIN!

Pumpkin is actually a vegetable and packed with vitamins and nutrients [but you have to eat the veggie itself, not just a pumpkin-spice flavored something]

The benefits of eating pumpkin include:

Boosts your immune system - One cup of cooked pumpkin contains nearly 20 percent of your recommended daily amount of Vitamin C, which is especially important this time of year!

Aids in workout recovery - Pumpkin is a good source potassium (more than a banana!) which helps restore the body’s balance of electrolytes after a heavy workout and keeps muscles functioning at their best.

Keeps your eyesight sharp - Pumpkin is rich in vitamin A, which helps protect your peepers!

To me, there is nothing more beautiful than the bounty of summer produce exploding in the farmer's markets during this time of year.

What's in season right now? Basil, blackberries, blueberries, cherries, corn (!!), cucumbers, eggplant, all the greens + herbs, melons, nectarines, okra, peaches, peas, peppers, summer squash, tomatoes, zucchini and MORE. Now I'm getting hungry...

Like I've mentioned before, I LOVE shopping at farmer's markets, so I am super excited that the markets are officially up and running for the season here in NYC.  

What's in season right now? Peas, radishes, greens, asparagus, potatoes, garlic, lettuce, herbs, mushrooms, rhubarb and (drumroll please...) STRAWBERRIES! I've yet to spot the little red gems at my local markets, but I'm keeping a look out!
