Paleo Banana Pancakes

Who doesn't love pancakes?

I remember having friends sleep over in middle and high school - we'd stay up way too late gossiping and watching MTV. In the morning, I'd make pancakes, usually chocolate chip, and we'd eat a TON. Like at least 7 each. Gotta love that teenage metabolism ;)

These pancakes are nothing like those of my childhood but boy are they delicious. The best part? They are packed with good-for-you ingredients so you can eat the entire stack and STILL feel incredible, teenage metabolism or not.

Paleo Banana Pancakes // gluten free, grain free, refined sugar free


  • 1 large ripe banana
  • 2 eggs
  • 2-3 tsp coconut flour
  • 1/2 tsp pure vanilla extract
  • pinch of baking soda
  • generous dash of sea salt
  • generous dash of cinnamon
  • 1-2 tsp coconut oil (for cooking)
  • optional: 1/2 tsp maca powder


  1. Mash banana with the 2 eggs (you can do this with a fork for chunkier pancakes, or blend in your blender for a smoother batter)
  2. Mix in all other ingredients.
  3. Heat coconut oil in a skillet over medium heat. When oil is hot, scoop batter into skillet to form 4-5 pancakes.
  4. Cook until the surface of the pancakes start to bubble and edges are browned and then flip VERY carefully (I used two spatulas to do this). Cook another few minutes on the second side.
  5. Top with fresh fruit, nut butter and (if desired) real maple syrup. ENJOY!

Blissful Backyard Yoga Brunch - Event Recap

First, THANK YOU to the lovely ladies who joined me this past Sunday for my Blissful Backyard Yoga Brunch!  The weather was perfect and I had so much fun planning and putting on this "high-vibe" event. 

For those of you who couldn't make it, I want to give you a little peak into what a morning of bliss with me looks like.  I hope to do more of these in the future - make sure you are signed up for my insider list to be the first to know about the next event!

10:30 AM - Guests began to arrive to my Brooklyn backyard oasis.  We sipped on lemon-cucumber infused water and chatted about NYC summers, getaways, and sunshine.  Cinnamon the dog joined us and was as excited as we were to be taking this mini-break from the hectic city!

11:00 AM - We moved on the deck and started the meditation and yoga practice.  Before we started moving, I offered doTERRA Balance essential oil  - one of my favorite blends for promoting a clear, grounded mind.  As we warmed our bodies with breath from the inside, the sun rising overhead started to warm us from the outside.  We flowed through Moon Salutations and a number of other cooling postures to promote a state of relaxation and bliss.  

12:00 PM - By the time we got to savasana, the sun was high in the sky and we were happy to make our way back inside to the air conditioning, and to FOOD! We filled our bellies with a nourishing, delicious vegetarian meal:

 - Green Dream Smoothie - A nutty, sweet smoothie that's packed with nutrients thanks to the ALOHA plant-based protein powder.  Recipe will be coming to the blog later this week!

 - Crowd-Pleasing Vegan Ceasar Salad 

 - Farmer's Market Frittata

 - Seasonal Berries and Sugar Plums with Coconut Whipped Creme 

1:00PM We could have stayed for hours talking (really!  we all were having such a good time together!), but the rest of Sunday awaited.  Each guest left light-hearted and energized, and with a bag of my favorite bliss-inducing goodies including doTERRA essential oils, ALOHA protein and greens products, and relaxing teas.  

This morning was so, so special.  I love yoga, delicious healthy food, and inspiring conversation and this event contained all of the above and more.  THANK YOU again to everyone who made this possible by participating and showing your support!
