5 Memorial Day Dishes + Cooking Class!

Looking for something healthy and easy to bring to your Memorial Day BBQ?  Something that will please all your friends and family, no matter their dietary preferences? Me too!  Here's what I'm thinking about making this weekend.  Each dish below is plant based, free of sketchy ingredients, easy to make, AND delicious!


- Veggie Kabobs with Green Goddess Dressing - A little something special to throw on the grill - rainbow kabobs with a beautiful, green dressing.  You can easily prep the kabobs and the dressing in advance.  No dairy free mayo on hand? You can use more avocado instead (just make sure that you add plenty of lemon so your dressing doesn't turn brown).  No time to make your own dressing?  I'm sure store-bought pesto would also be amazing!

- Baked Falafel Burgers - A veggie burger meets falafel sandwich - sounds heavenly to me!  These patties are packed with flavor from the herbs and garlic; I imagine you could also make these bite sized for sliders.  Serve with your favorite sauce and toppings. 

- Simple Summer Quinoa Salad - My go-to dish for the summer - this quinoa salad comes together in less than 30 minutes, because who wants to be in the kitchen when its beautiful outside? Not me!  This salad is also a great vehicle for whatever veggies you have on hand - got leftover grilled zucchini or corn on the cob? Throw it in!  some baby spinach that needs to be used? Use it here! 

- Kale, Avocado, and Strawberry Salad - Strawberries brighten up the earthiness of kale in this salad.  I know kale is not for everyone, but I do love bringing kale salads to parties and BBQs because kale holds up well in warmer temps (nothing is more unappetizing than a wilted, soggy-looking salad).  Massage the dressing into the salad to soften up the kale and make it more palatable.

- Dilly Chickpea Salad - This dish is such a hit anytime I bring it to a gathering!  It's flavors are reminiscent of tuna or chicken mayo-based salads, but much fresher and lighter.  Since there is no mayo, no eggs, and no meat, this dish is much better suited for bringing to an outdoor party.  You can serve it as a side, wrapped up in tortillas or lettuce cups, or as an appetizer with crunchy crackers. Yum!
