Berry Avocado Beauty Smoothie

Despite its murky color, this green smoothie tastes GREAT and is packed with all my favorite beauty foods. Coconut water and leafy greens hydrate your cells, berries provide anti-aging antioxidants, and the healthy fats from avocado keep your skin soft (I promise, you won’t taste it in there!). Tocos is an incredible superfood, the "Ultimate Skin Food" as it contains bio-available vitamins D & E. But probably the most potent (and maybe weirdest) beauty food is collagen protein. Collagen is what is responsible for giving skin elasticity, hair its strength, and connective tissue its ability to hold everything in place. It’s pure protein so you will stay satisfied and energized for hours. Isn’t that beautiful?

High Protein Avocado Toast

In case you didn't know this already, I love avocado. As I've mentioned before, it's my "perfect food." During my recent move, I found myself turning to avocado toast for many a quick meal. This variation of the oh-so-trendy avocado toast came out of my desire for an easy meal that still packed in all the essential macronutrients : protein, fat, complex carbs. 

If you haven't experimented with lentils yet, I recommend you pick some up soon. Not only are they high in protein and iron, they are super easy to make. I've recently added cooking lentils to my weekend meal-prep routine so they are ready to go for toast, bowls, and other meals during the week.

High Protein Avocado Toast // vegan, gluten free option, soy free

Serves 1 (but feel free to double this recipe if you want to share, or if you are really hungry!)

Ingredients:

- 1 piece bread of choice (I love Free Bread Inc gluten free breads)

- 1/2 ripe avocado

- 1/3 cup cooked lentils (I used split red lentils as they have the quickest cook time)

- sea salt and pepper

- lemon/lime

- red pepper flakes (optional)

Instructions:

1. Toast your bread. 

2. While bread is toasting, mash avocado with lemon/lime in a small bowl using the back of a fork. 

3. Spread lentils over toasted bread (if you use split red lentils they will probably be soft enough to smoosh on the toast like a dip).

4. Top lentils with mashed avocado. Season with S&P and red pepper (if desired). ENJOY!

 

Other variations:

Mediterranean: Use hummus instead of lentils.  Top with roasted red peppers, olives, or artichoke hearts.

Mexican:  Use cooked black beans instead of lentils.  Sprinkle with cumin and top with salsa.

American: Use a sliced hard-boiled egg instead of lentils. Top with a sliced tomato and lots of freshly ground black pepper.

Creamy Vanilla Smoothie (Banana-Free!)

While I LOVE me some bananas (case in point: thisthisthis oh and this), I know not everyone is into this sweet fruit AND I know many people are watching their sugar intake.  I'm personally experimenting with having more protein and less sugar in the morning, and thus this smoothie was created!  Packed with protein, greens,  and healthy fats, this is a well-rounded meal in a cup.

Creamy Vanilla Smoothie // vegan, gluten free, low sugar, paleo

Ingredients:

- 1-2 scoops vanilla protein (see my recommendations for protein powders here)

- 1/2 large avocado

- 1 cup almond milk, hemp milk, or water 

- 1 cup ice cubes

- Generous handful of spinach, baby kale, or a tsp of spirulina 

- Dash sea salt

- Optional add-ins (try one or two at a time!): 1 tsp maca powder, 1 tsp cinnamon, 1/2 inch fresh ginger, 1 tbsp nut butter, 1 tsp bee pollen, 1 tbsp chia seeds

Instructions:

1. Add it all to your Vitamix or high speed blender and blend away!  ENJOY!

Coconut Avocado Ice Cream

GUYS!  It's National Ice Cream day so I'm (unexpectedly) popping in with a sweet treat for you - a throwback!  This is a recipe I developed a few years ago and it is MMMMMM GOOD.  

No ice cream maker? FEAR NOT!  I used this technique for years (and still do, when I'm not feeling like pulling out the machine):  pour your mixture into ice cube trays and freeze.  Once frozen, throw into your blender or food processor and blend until soft serve consistence is achieved (you may have to add a little liquid to help the process).

Coconut Avocado Ice Cream // vegan, gluten free, soy free, refined sugar free

Ingredients: 

- 2 large Haas avocados

- 1- 14 ounce can + 1/2 cup light coconut milk*

- 1/2 cup maple syrup or agave**

- 1 tablespoon lime juice

- 1 teaspoon lime zest

- 1/2 cup flaked coconut, toasted (optional)

Instructions:

1. Make the base: Scoop the flesh from the avocados and add to your high speed blended or food processor, along with the coconut milk and sweetener of choice.  Blend until completely smooth and then stir in lime juice and zest.

2. Freeze: Transfer mixture to your ice cream machine and churn according to manufacturers instructions.  It will be more like soft-serve when its done - transfer to a container and freeze for 1-2 hours for a firmer ice cream. Top ice cream with toasted coconut when serving. 

*I've used light coconut milk and was happy with the results.  Use full fat coconut milk for a richer taste.

** Feel free to reduce the amount of sweetener if you know you like things on the less-sweet side.  This amount was slightly too sweet for me, but I find it's pleasing to most normal taste buds =)

This thick, creamy chocolate pudding is perfect for when you’ve got a chocolate craving, and you have to fix it ASAP. Plus, unlike regular chocolate pudding, this one is super healthy, gluten-free, and vegan!

Dreamy Chocolate Avocado Pudding // vegan, gluten free, refined sugar free

Ingredients:

  • 1 large avocado
  • 1 packet ALOHA Daily Good Chocolate
  • 2 TBSP maple syrup or raw honey
  • 2 TBSP water
  • 1/4 cup cacao powder
  • Dash sea salt

Instructions:

  1. Combine in all ingredients in your food processor or blender. 
  2. Process or blend until silky smooth (you may need to stop and scrape down the sides of your machine to ensure everything is fully combined).
  3. Divide into two small containers - enjoy immediately or cover and refrigerate until ready to serve.
