Paleo Overnight No-oats!

An oat-free spin on the classic overnight oats! Funny enough, I didn't mean for this recipe to be paleo or grain-free: I wanted to make some easy grab-n-go breakfasts this week, but I ran out of rolled oats. I looked in my pantry and saw flaked coconut and slivered almonds, and thought "Hmmm, these two things are about the same size and shape as oats. Let's try it!" And thus, these paleo overnight no-oats were born!

Ingredients:

  • 1/4 cup unsweetened flaked coconut

  • 1/4 cup slivered almonds

  • 1 cup non-dairy milk (almond, coconut, cashew, etc!)

  • 1 TBSP chia seeds

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon (or more, if you are a cin-a-holic like me!)

  • dash sea salt

  • 1/2 banana, sliced

  • other optional add-ins: frozen or fresh berries, goji berries (my fave!), cacao nibs, walnuts, drizzle of maple syrup or local honey, bee pollen

Instructions:

  1. Mix all ingredients together in a jar or small container, stir in your choice of add-ins and let sit in the fridge overnight.  Make a few jars at the beginning of the week and have breakfast ready when you are - it's so, so easy!

Shortcut Matcha Latte

You all know I love my MATCHA! It's been my warm cup of choice in the mornings since I stopped drinking coffee in January.

Traditionally, matcha tea is made by whisking the matcha tea powder (finny ground green tea leaves) with hot water. You would then make this a latte by steaming milk and swirling the two together. While that makes for a pretty picture, I knew that I needed a shortcut, especially since I was pretty set on making my own almond milk to enjoy with the matcha.

First I hacked my homemade almond milk, cutting the process down to just two minutes. This trick definitely sped things up, but I was still making the almond milk a few times per week, and whisking the matcha up daily. I wondered if I could simplify the process even further, and the following recipe was born.

This delicious Shortcut Matcha Latte comes together in just a few minutes - no pre-made almond milk or whisk required! All the magic happens right in your high speed blender.

Shortcut Matcha Latte / vegan, gluten free, refined sugar free, paleo

Ingredients:

- 2 cups hot water (almost boiling, but not quite)

- 1 tsp matcha powder

- 1 scant tablespoon coconut oil

- 1 scant tablespoon almond butter

- Optional add-ins: 1/2 tsp pure vanilla extract, dash cinnamon, ginger, or turmeric (my personal favorite), pinch sea salt, cacao powder

Instructions:

1. Heat your water - you want it almost boiling, but not quite. If it boils, let it cool for a minute or two (you don't want it to be so hot that it burns the matcha, and your mouth!)

2. Add to your blender: matcha, almond butter, coconut oil, and any add-ins. Top with hot water. Place the lid on your blender. I also put a dish towel over the top of the blender - I find that when I blend hot liquid, steam/water sometimes escapes. 

3. Blend it up! If possible, start on a low setting and then increase the speed. Let it run for a good 30 seconds to 1 minute (you want the coconut oil to melt and get super frothy). 

This recipe makes 2 cups - I usually drink the whole thing myself but you can definitely share it with someone special =)

2-Minute Almond Milk (VIDEO)

I love DIY stuff - I think its great to make your own granola, totally rad to grow your own tomatoes, and beyond cool to brew your own kombucha.  That being said, sometimes LIFE takes priority, whether it's work or fun, and creating everything from scratch just isn't do-able. 

That's why I LOVE this recipe - its my shortcut way to easy, homemade almond milk.  So you don't have to pick between cooking for yourself and going for that run, or meeting up with friends, or watching your favorite show - you too can do it all!  

2-MINUTE ALMOND MILK // vegan, gluten-free, raw, sugar free

Ingredients:

- 1/2 cup almond butter, raw and unsalted (you can use roasted, it will just have a different flavor)

- 4 cups filtered water

- 2 pitted medjool dates (optional, for sweetness)

- 1 tsp pure vanilla extract

- dash sea salt 

Instructions:

Add all ingredients to your high speed blender and blend until frothy and smooth.  Enjoy!
