Three easy vegetable recipes

The past week I've been hanging out with my parents down in Virginia and boy has it been nice to use their big, new kitchen! I've been cooking up a storm - everything from perfectly spiced pumpkin granola to gut-healing bone broth.

I've also made some pretty stellar veggie dishes. Now that the weather has been cooling down I've found that I'm craving more cooked vegetables (and warm food in general) in my diet. Have you noticed this too? I realized that it's been awhile since I shared some simple vegetable recipes with you all so today I'm giving you three of my most recent favorites. They are packed with flavor and highlight some of the gorgeous produce this season has to offer.
