What I Ate Wednesday 8/19/15

In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday."  Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog.  I'll share helpful information on what I'm eating and why. 

PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa.  I'm still figuring out what works best for me and guess what?  It's changing all the time.  I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals. 

Here's what I ate this Wednesday:

Upon waking: Whoops, slept through my alarm!! No matcha for me this morning... grabbed a handful of almonds on my way out the door to teach my 6:30AM class.

Breakfast: Giant Blueberry Buzz smoothie.  I've been adding tons of ice to my smoothies these days which really bulks them up!

AM Snack: Grabbed a half-caff coffee with almond milk in between yoga classes. 

Lunch: Roasted sweet potatoes, sautéed baby kale, sauerkraut, and a hard boiled egg. Inspired by the #superhumanbreakfast challenge!

Afternoon snack: 2 slices gluten free toast (I'm recently obsessed with Free Bread) + coconut butter. Quick tip: Have a larger snack and a smaller dinner if you know you won't be able to eat until way late. I knew I was teaching late, so had a big afternoon snack and then a small dinner. This gives me energy to get through my evening, and I have found I sleep better if I don't have a huge meal before going to bed. 

Dinner: Half of a sweetgreen Spicy Sabzi salad (spinach and kale, spicy quinoa, spicy broccoli, raw beets, raw carrots, sprouts, basil, roasted organic tofu, siracha, carrot chili dressing). I saved the second half for lunch the next day (and added in avocado and chickpeas).
