In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals.
Here's what I ate this Wednesday:
Upon waking: Water with lemon, matcha latte
Breakfast: Blueberry Buzz Smoothie + lots of greens (which why it looks like pond scum!)
AM Snack: Watermelon. What can I say, teaching lots of hot yoga + humid weather = I just want foods that hydrate me!
Lunch: A BIG ol' bowl of veggies: local lettuce from my CSA, leftover grill veggies (green beans and Chinese broccoli also from my CSA), cucumber, avocado, quinoa, curry kraut, almonds + hemp seeds. Quick Tip: Try making your lunch bigger than dinner. As you can see from my "What I Ate Wednesday" posts, I often have a much bigger meal in the middle of the day. Not saying you should eat a Thanksgiving-sized plate every day, but eating lighter at the end of the day allows your body to slow down and use the time that you are asleep to truly rest and rebuild (versus digesting a huge meal).
PM Snack: Kombucha + a handful of raw walnuts
Dinner: Vanilla Avocado Smoothie. Let me be real: I taught 4 classes (3 in the heat) and was simply exhausted when I got home. I had zero energy to cook (let alone eat a big meal) but I knew I needed to feed my body something so I whipped up a quick smoothie with protein, greens, and healthy fats (recipe will be coming soon!). Hit the spot!
