In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals.
Here's what I ate this Wednesday:
Upon waking: matcha tea with my 2-minute Almond Milk and little raw, local honey.
Breakfast: My new favorite smoothie! Blueberries, almond butter, vegan protein, greens, cinnamon, and ginger.
AM Snack: A small handful of raw nuts (almonds, cashews, walnuts - not pictured)
Lunch: Salad with mixed greens, grilled veggies (squash and garlic scapes from my CSA), avocado, parsley, and this kalamata olive hummus. Plus a square of ALOHA chocolate. Quick tip: I love substituting hummus and avocado for salad dressing. Mix it up and mash it in a little bit so all your greens are covered in flavor. YUM!
PM Snack: Cucumbers (also from my CSA!) with sea salt and lemon - so delicious and cooling after my relaxing time in the float tank.
Dinner: Met up with a girlfriend and we took dinner down to Brooklyn Bridge Park to enjoy the sunset (it gets me every time). We had a big salad with bok choy, chickpeas, green peas, hemp seeds, avocado, and radishes. I made a quick dressing with lemon juice, tamari (gluten free soy sauce), and fresh basil. Plus kombucha with vodka (interesting combination) and cherries for dessert. I did not take a picture as I was totally enjoying the present moment, but I had the same salad for dinner last week, so that's the picture above.
