In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals.
Here's what I ate this Wednesday:
Upon waking: Matcha green tea with my 2-Minute Almond Milk.
Breakfast: Green smoothie with vanilla protein powder, avocado, cinnamon, ginger, and lots of ice. Quick tip: Sub avocado for your regular fruit in your smoothies - its lower in sugar and higher in healthy fats that keep you satisfied!
AM Snack: Generous handful of almonds + kombucha. I taught 3 classes before lunchtime so needed this extra boost to get me through the last one! (not pictured, whoops!)
Lunch: Grilled red cabbage salad with avocado and a soft-boiled egg. Did you know you could grill cabbage? It's amazing!! The dressing for this salad is lemon juice, garlic, olive oil, and basil and it is SO GOOD. Will post the recipe soon!
PM Snack: Farm fresh blueberries, cacao nibs, and mulberries. Some of my favorite superfoods! Quick tip: try mixed dried fruit and chopped nuts with fresh fruit for an interesting texture combination!
Dinner: "Sweet Angel" rice paper wrap and "Mighty 'Shroom" roll from Beyond Sushi (the most amazing vegan sushi joint in NYC). I taught a new class in Midtown that happened to be right next to the new Beyond Sushi location, so I took it as a sign that I needed to treat myself to dinner there. SO GOOD! This is not your typical cucumber-avocado-roll vegetarian sushi - Beyond Sushi makes amazing sauces out of veggies, beans, and seasonings, and has incredibly creative roll combinations. I highly recommend this place!
