In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals.
Here's what I ate this Wednesday:
Upon waking - water + lemon + mint, matcha latte with homemade cashew milk. Quick tip: I love adding fruit and fresh herbs to a big glass of water at night - in the AM the water is infused with the flavors and oh so delicious! Plus, you get the added vitamins and minerals from the fruit and herbs.
Breakfast: Frozen grapes + a few superfood energy bites. Quick tip: Frozen fruit is one of my favorite summertime snacks! Not only does it cool you down, but it also makes you savor the fruit slowly. Fruit is good for you, but it's important to remember it does have sugar and sweet fruits, like grapes and tropical fruits, should be eaten in moderation!
AM snack: iced matcha, small Braeburn apple. Note: I don't normal double up on the matcha but I found myself craving a coffee after teaching my early AM yoga class. Matcha was my healthy alternative as I know coffee upsets my stomach and leaves me feeling drained a few hours later.
Lunch: Veggie Nori Rolls with Cauliflower Rice - I'm in love with this recipe! So satisfying, yet so light!
PM snack: Superfood trailmix.
Dinner: Big salad with chickpeas, quinoa, roasted leeks, and paleo crackers from Hu Kitchen, PLUS ALOHA Dark Chocolate and a few strawberries from my CSA.
