What I Ate Wednesday - 6/3/15

In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday."  Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog.  I'll share helpful information on what I'm eating and why. 

PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa.  I'm still figuring out what works best for me and guess what?  It's changing all the time.  I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals. 

Here's what I ate this Wednesday:

Upon waking: Water with lemon, matcha latte with coconut milk. Quick tip: To save money, buy full fat coconut milk (in the can).  Then blend with water to create a lighter coconut milk for recipes, smoothies, coffee, etc. 

Breakfast: Banana ice cream with ALOHA Daily Good.  Topped with sesame seeds, chia seeds, bee pollen, and mulberries.  I don't eat "banana ice cream" every day, it just so happens I have these past two Wednesdays.  Quick tip:  Add toppings to your smoothies!  I love to do this for two reasons 1) it boosts the nutrient content and 2) it makes you “chew” your smoothie (see this post for the benefits of chewing).

Lunch: Baby kale + roasted beets + avocado +sauerkraut + pumpkin seeds + olive oil.  Fuel to start prepping for my cooking class!

Afternoon snack:  Lots of tastes of food as I was preparing for my cooking class.  Plus some bites of coconut milk ice cream and a ginger kombucha.  The ice cream pictured above is my favorite store-bought variety - its dairy free and has no added sugar.  Woo hoo! Yeah, maybe not a "perfectly healthy" snack but that’s okay!

Dinner: Cooking class eats: BBQ Jackfruit, Kale Salad, + Quinoa Salad with Peanut Ginger sauce.  And Berry Rhubarb Crumble for dessert (recipe coming soon!).  See full recap of cooking class PLUS recipe for the BBQ Jackfruit here.
