In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals. Want some help in finding what works best for your body? Here's what I ate this Wednesday:
Upon waking: WATER!! Yerba Mate tea with some coconut oil and raw honey stirred in.
Breakfast: Smoothie with frozen peaches (from my CSA this summer!), maca, bee pollen, spirulina, and vanilla protein.
Lunch: Heaps of these garlicky greens with roasted butternut squash and tempeh, topped with gomasio (a seasoning with sesame seeds, sea salt, and seaweed). Quick tip: Prep your ingredients on Sunday (roast veggies, cook protein, wash greens) for weekday meals that come together in minutes (I threw everything in my wok and simply heated).
Afternoon snack: RAW CHOCOLATE!! Okay, so there's only one in the picture but I definitely had more than one... ;) plus some kombucha (not pictured).
Dinner: Jar of love: quinoa, peas, roasted Brussels sprouts, avocado + sauerkraut. Quick tip: Did you know that you can make quinoa in your crock pot??? Why did I just discover this now??
Evening snack: The cutest little Almond Banana Smoothie from Hu Kitchen post my Stress-Free Holidays event at Athleta (which was a BLAST by the way - I'll be writing up a recap for those of you who couldn't make it, stay tuned).
