In an effort to show you all more of what I eat as a primarily plant-based, active adult, I'm starting a new series here on the blog - "What I Ate Wednesday." Each Wednesday I'll snap a picture of everything I eat and post the pictures plus descriptions here on the blog. I'll share helpful information on what I'm eating and why.
PLEASE, please, please do not think that your food choices should directly mirror mine - we are all different and what works for my body may not work for your body, and vice versa. I'm still figuring out what works best for me and guess what? It's changing all the time. I'm simply sharing my choices with the hopes to give you more ideas when it comes to plant based foods and meals.
Here's what I ate this Wednesday:
Upon waking: Water, then ginger matcha with homemade cashew milk. Tried this new type of matcha green tea that has powdered ginger in it. Good but I would have liked more ginger!
Breakfast: smoothie with greens, peach, vanilla protein, cinnamon + nutmeg (see this post for why you should add spices to your smoothies) + small handful of almonds. Not the prettiest smoothie, but it was tasty!
PM snack: Pear from my CSA plus cacao chai tea (wow!) with almond milk Quick Tip: opt for chai tea from a tea bag vs the lattes. Those usually contain concentrated syrup which is mostly sugar and artificial ingredients. You can make you tea feel like a treat by adding steamed milk (dairy, almond, coconut, etc) and honey if you like it sweet.
Dinner: Asian style stir fry with onion, bok choy, cilantro, radishes, and sweet potato + quinoa. The cooked the quinoa and roasted the sweet potato on Sunday so the meal came together in a snap! Sautéed the onion in some coconut oil, added everything else and cooked until warm. YUM! (Follow me on Periscope @EmilyNachazel to see my weekly meal prep!!)
